Thermomixer Apricot Choc-Chip Cake

Hope you enjoyed making the Snackbox Slice last week!

This week we have a delicious Apricot and Choc-Chip Cake that the kids will love in their snack box or as an after school treat. I am also providing instructions for making this Apricot Choc-Chip Cake for those of you who don’t own a thermomixer, this cake is too good not to share!

What you'll need
  • 1 cup chopped dried apricots
  • 1 cup apricot nectar
  • 125g butter
  • 140g sugar
  • 2 eggs, seperated
  • 75g dessicated coconut
  • 250g self-raising flour
  • 150g choc chips
Instructions
  1. Soak the apricots in the nectar for an hour.
  2. Preheat oven to 170C.
  3. Grease cake tin. I used a 20cm x 20cm square cake tin.
  4. Insert butterfly into TM bowl. Place egg whites into TM bowl and beat without MC in place for 3 minutes at 50C on speed 4 until soft peaks form. Set eggs aside and remove the butterfly.
  5. Cream the butter and sugar until light and fluffy 45 seconds speed 5.
  6. Add egg yolks one at a time through the opening in the lid and mix for approximately 15 seconds speed 5.
  7. Add coconut, half the flour and half the apricot mixture. Mix on reverse 20 seconds speed 3.
  8. Add remaining flour, apricots and choc-chips. Mix reverse 20 seconds speed 3.
  9. Add the beaten egg whites.
  10. Pour mixture into cake tin and bake for 1 hour.
  11. Stand for 5 minutes before turning onto a wire rack.

 Traditional Apricot Choc-Chip Cake 

1 cup chopped dried apricots

1 cup apricot nectar

125g butter

140g sugar

2 eggs, seperated

75g dessicated coconut

250g self-raising flour

150g choc chips

  1. Preheat oven to 170C.
  2. Grease cake tin. I used a 20cm x 20cm square cake tin.
  3. Soak the apricots in the nectar for an hour.
  4. Cream the butter and sugar until light and fluffy.
  5. Add egg yolks, one at a time, beating well after each one.
  6. Add coconut, half the flour and half the apricot mixture and stir.
  7. Add remaining flour, apricots and choc-chips.
  8. Beat the egg whites until soft peaks form and fold into mixture.
  9. Pour mixture into cake tin and bake for 1 hour.
  10. Stand for 5 minutes before turning onto a wire rack.
